RICE AND BROCCOLI CASSEROLE 
1 pkg. frozen chopped broccoli
1/2 c. sour cream
1 c. shredded Mozzarella or Cheddar
1 can cream of mushroom or chicken soup
1 1/4 c. Minute rice
3/4 c. water

Thaw broccoli. Combine all ingredients. May be cooked in a skillet over medium heat or in a 350°F oven for 45 minutes or until rice is tender and liquid has cooked down.
