SQUASH CASSEROLE 
1 1/2 lb. squash
1/2 c. onion, finely chopped
1/4 c. bell pepper, finely chopped
1/4 c. butter
1/2 c. mayonnaise
1 c. or sm can chestnuts, finely sliced or chopped
1/2 c. shredded sharp cheese
1 tsp. sugar (optional)
2 eggs, beaten
1/4 c. or more of bread crumbs

Cook first 3 ingredients until tender; drain. In 2-quart casserole, add softened butter and the other ingredients. Mix well. Cover with bread crumbs evenly. Bake at 350 degrees for 30 minutes or until done.
