DICED APPLE CAKE 
2 eggs
2 c. sugar
1 1/2 c. Wesson oil
3 c. flour
1 tsp. salt
1 1/2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. vanilla
1 c. nuts (if desired)
3 c. diced apples

Dice up 3 cups apples with peelings on. Beat eggs, sugar, and oil with mixer until stiff mixture forms. Sift dry ingredients together and add to ingredients in mixer. Mix well. Add apples last and mix by hand until mixture is stiff. Turn into 13 x 9 x 2 inch pan and bake at 350 degrees for 1 hour.
