ITALIAN CHICKEN AND VEGETABLE
DISH
 
Chicken parts (approximately 2 per person)
8 carrots, peeled & cut into thirds
1 lg. onion, sliced
2 sm. cloves garlic (optional)
Approximately 6 potatoes, cut in fourths
1/4 c. cooking oil
2 c. water
Salt
Pepper
Oregano

Laye r as follows:

Wash chicken and place evenly in pan. Add sliced onion. Add garlic (cut in small pieces). Add potatoes. Add carrots. Season each layer with pepper, salt and oregano. Add 1/4 cup cooking oil (lite preferred). Pour 2 to 3 cups of water to bottom of pan. Cover and bake 1 to 1 1/2 hours at 350 degrees. Serves 4 - with garlic bread or Italian bread.
