BLACKENED FLANK STEAK 
1 1/2 tsp. salt
1 1/2 tbsp. white pepper
1 1/2 tbsp. whole black peppercorns
1 1/2 tbsp. fennel seeds
2 1/2 tsp. cayenne pepper
2 1/2 tsp. dry mustard
2 tbsp. garlic powder

Grind all ingredients except steak in food processor or blender. Coat both sides of steak with dry mixture. Coat a seasoned cast iron skillet with olive oil, heat until smoking. Spread steak on both sides; meat will be black. For rare meat, cook 5 more minutes on each side. For medium doneness, cook 7 minutes on each side. Slice on diagonal in thin strips. Yield 1 steak serves 3-4 people.
