GAELIC COFFEE CAKE | |
1 c. sugar 1/2 c. butter 2 eggs 2 c. flour 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 1 c. sour cream, commercial 1 tsp. vanilla CINNAMON NUT TOPPING: 1/2 c. pecans or walnuts, chopped 3 tbsp. brown sugar, firmly packed 2 tbsp. sugar 1/2 tsp. cinnamon Cream sugar and butter until light. Add eggs one at a time. Beat well after each addition. In another bowl mix together flour, baking powder, baking soda, and salt. Add blended dry ingredients to creamed mixture alternately with sour cream and vanilla. Mix until smooth. Spread in well greased 9-inch square pan. Mix together ingredients for topping. Sprinkle cake with cinnamon nut topping. Bake at 350°F for 45-50 minutes. |
