CUCUMBER PICKLE | |
2 bottles lime from drug store 8 lbs. cucumbers, sliced 9 c. sugar, (if for bread & butter pickles, use 6 c. sugar) 2 gal. water 1/2 gal. vinegar 1 tbsp. salt 2 tbsp. pickling spice Wash cucumbers, slice 1/2 inch thick, soak 24 hours in lime and water. Drain and wash thoroughly. Then make vinegar solution of vinegar, sugar and salt. Add cucumbers and soak 3 hours. Remove cucumbers and add to the vinegar 2 tablespoons pickling spice. Boil 10 minutes. Return cucumbers to the hot vinegar. Boil 10 minutes. Pack while hot and seal. |
