BAKED CARAMEL CUSTARD 
6 egg yolks
1/2 c. sugar
2/3 c. sugar
1 tsp. vanilla extract
Dash salt
2 c. milk

Preheat oven to 350 degrees. Thoroughly beat together with electric mixer egg yolks, 1/2 cup sugar, vanilla extract and salt.

Scald milk. Very slowly pour scalded milk into egg mixture, beating as you pour.

Cook 2/3 cup sugar in a cast iron skillet over a low heat until sugar caramelizes. Pour caramelized sugar into 6 custard cups and let cool for 2-3 minutes.

Carefully pour custard mixture into custard cups over caramelized sugar. Set custard cups in 13 x 9 baking pan. Pour 1-inch hot water into baking pan around custard cups. Bake 1 hour or until knife inserted into custard comes out clean.
