CHICKEN SALAD 
4 chicken breast, skinned
1 c. celery, chopped
1 c. pickles, sweet, chopped
3 egg whites, boiled and chopped (discard yolks, bad!)
1 lg. apple chopped
3/4 c. pecans, chopped (optional)
Fat free mayonnaise

Cook, debone and chop chicken in small pieces. Reserve broth in refrigerator to defat and use later. Add remaining ingredients. Add enough mayonnaise to make as moist as you desire. Salt and pepper to taste.
