CHOCOLATE CHIP CHEESECAKE | |
5 eggs 1 tbsp. vanilla 1 tbsp. lemon juice 2 1/2 lbs. cream cheese 1 1/2 c. sugar 1 c. heavy cream 1/2 c. dark creme de cocoa, optional 1 c. chocolate chips 2 c. vanilla wafers TOOLS: Large cuisinart or food processor 1 (9 inch) springform pan Rubber spatula In food processor with chopping blade, pulverize vanilla wafers. Pour into well greased springform pan and roll around until all sides are coated equally. Any excess may be spread around bottom of pan. Next in food processor put eggs, vanilla, lemon juice, sugar, heavy cream and liquor. Blend. With food processor still running chunk cream cheese and add 1 cube at a time until all blended. Use spatula to scrap sides add chocolate chips blend for 10 seconds. Pour into springform pan and bake at 325 degrees for 2 hours or until entire top of cheesecake moves as one when tapped on side of pan with metal spatula. |
