CROCKPOT ZUCCHINI 
6 c. zucchini thinly sliced
1/2 c. chopped onion
1 c. shredded carrots
1 can cream of chicken soup
1 c. sour cream
1/4 c. flour
1 (8 oz.) stuffing crumbs
1/2 c. butter

Combine zucchini, onions, carrots, and soup. Combine sour cream and flour and stir into vegetables. Toss crumbs and butter.

Put half crumbs on bottom of crockpot, then vegetables; put remainder of crumbs on top. Cook on low for 7 hours.

This awesome recipe tastes just like Thanksgiving stuffing. I altered the recipe and used the entire 12 ounce box of stuffing crumbs. Definitely plan to use this recipe as long as I keep picking zucchini. As an added note: for those of you on Weight Watchers... if you use the Campbell's Healthy Request cream of chicken soup and reduced fat sour cream, the total points value for 1/2 cup serving is only 2 points plus!
