LANCASHIRE CHEESE SCONES 
6 oz. self-rising flour
2 tbsp. butter
4 oz. cheese (grated)
1 egg
A little milk
Pinch of salt
Pinch of cayenne pepper
A little beaten egg

Put flour and butter into the food processor until mixture resembles coarse bread crumbs. Add cheese, salt and cayenne, mix a few seconds. With machine turned on, add egg together with just enough to milk to make a soft pliable dough. Roll out on a lightly floured board, cut into rounds and place on a greased baking tray. Brush with beaten egg and bake for 15-20 minutes with oven at 475 degrees.
