MAINE STRAWBERRY PIE 
8" pie shell
1 qt. strawberries
1 c. sugar
3 tbsp. cornstarch
1 (3 oz.) pkg. cream cheese, softened

Simmer 1 1/2 cups strawberries with 1/2 cup water for 3 minutes. Blend sugar, cornstarch and 1/4 cup water; add to strawberry mixture. Boil 1 minute, stirring constantly. Cool. Spread cream cheese on bottom of pie shell. Layer fresh strawberries over cheese, cover with cooked mixture. Garnish with choice berries and whipped cream. Refrigerate for 2 or more hours.
