PEANUT BRITTLE 
1 c. sugar
1/2 c. corn syrup
1 c. roasted peanuts
1 tsp. butter
1 tsp. vanilla
1 tsp. baking soda

Combine sugar and corn syrup in 2 quart batter bowl. Microwave high 4 minutes; add peanuts. Microwave high 3-4 minutes until light brown. Add butter. Microwave high 1-2 minutes. Add vanilla and baking soda and stir until light and foamy. Pour out onto lightly greased baking sheet. Spread thin. Cool; break into pieces.

Since microwave ovens vary in power, you may need to adjust your cooking time.
