QUESADILLAS 
2 tbsp. butter
4 flour tortillas
1 c. shredded Monterey Jack or cheddar cheese

Heat butter in skillet. Lay flour tortilla in pan. Quickly spread 1/4 cup cheese on half of tortilla. Flip over empty half and cook on medium-high heat until cheese begins to melt. Turn over when bottom is lightly browned. Brown second side. Remove to cool plate, cut into triangles. Repeat with remaining tortillas and filling.

MICROWAVE DIRECTIONS:

Lay flour tortilla on microwave-safe plate. Spread 1/4 cup cheese on half of tortilla. Flip over empty half. Microwave on high for 20 to 30 seconds. Cut into triangles. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.

I use the microwave method, with variations: Lay one tortilla on microwave-safe plate. Spread thin layer of refried beans on tortilla. Optional: Top with thin layer of meat -- shredded or finely chopped cooked chicken breast or ground beef (leftover from tacos is terrific). Top with shredded low-fat Mexican four-cheese mix. Put another tortilla on top and press down on all sides and middle. Microwave 1 minute (without meat) or 1 minute 15 seconds (with meat). Wait until it cools, and cut with small pizza cutter and/or knife. Serve with toppings -- sour cream and salsa.
