MAKE AHEAD ENCHILADA CASSEROLE 
1 lb. ground beef or turkey
1 onion
1 can enchilada sauce
1 can cream of mushroom soup
1 can cream of chicken soup
24 corn tortillas, cut in strips
2 c. Cheddar cheese

Sauté onions with meat until meat is cooked. Add all ingredients except tortillas and cheese. Layer tortillas and meat mixture, beginning and ending with meat mixture. Cover with cheese and freeze now, or bake at 350°F for 35 minutes.
