CHICKEN SALAD LOG 
1 (8 oz.) pkg. cream cheese
1/4 c. mayonnaise or salad dressing
2 tbsp. lemon juice
1/2 tsp. salt
1/4 tsp. ground ginger
1/8 tsp. pepper
4 drops red pepper sauce
2 c. cooked chicken, finely cut up
2 hard cooked eggs, chopped
1/4 c. green onions, sliced
3 green pepper rings, (optional)
1 tbsp. toasted sesame seed, (optional)
3 tbsp. green onion or green pepper, chopped, (optional)
3 tbsp. pitted ripe olives, chopped, (optional)
3 tbsp. chopped pimento, drained
Crackers or bread rounds

Mix cheese, mayonnaise, lemon juice, salt, ginger, pepper and pepper sauce. Stir in chicken eggs and 1/4 cup onions. Shape into log. Wrap in plastic wrap; refrigerate until firm, about 4 hours. Cut green pepper rings to make strips. Place strips diagonally across log, dividing log into fourths. Sprinkle sesame seed on 1 section. Repeat with 3 tablespoons onion, the olives and pimento on the other three remaining sections, (optional). Serve with crackers or bread rounds. Serves 10 to 12.
