STUFFED ARTICHOKES 
4-6 med. artichokes
1 c. bread crumbs
Olive oil
1 sm. can chopped black olives
1 c. finely chopped pepperoni
Parmesan or Romano cheese
Parsley
1 c. raisins
Seasoned salt and pepper
1 sm. clove garlic, chopped fine
Lemon juice

Snip off sharp tops of artichokes with kitchen scissors. Wash, drain. Mix together above ingredients. Stuff artichokes. Place in saucepan with water in bottom 1 inch or so. Sprinkle tops with lemon juice and cover. Simmer on low heat for at least 1 hour. Do not allow water to evaporate. Keep adding water during cooking. Artichokes are done when leaves pull easily.
