ROLLY POLLY COOKIES 
2 3/4 c. flour
2 tsp. cream of tartar
1 tsp. baking soda
1/8 tsp. salt
1 c. shortening
1 1/2 c. sugar
2 eggs
Cinnamon

Sift flour and measure 2 3/4 cups. Add cream of tartar, soda and salt. In large mixing bowl, cream shortening and sugar. Add eggs and beat well. Add flour mixture and blend well. Chill dough for 2 hours.

In small bowl combine 2 teaspoon sugar with 2 teaspoons cinnamon. Roll dough into small balls and dip into sugar cinnamon mixture. Place on a cookie sheet and bake at 350 degrees for 10-12 minutes. Cookies will flatten out when baked.
