FLAN 
1 can evaporated milk
1 can whole milk (use can from evaporated milk to measure)
1 can sweetened condensed milk
4 eggs
1/4 tsp. vanilla
1 1/2 c. sugar

Combine first 5 ingredients in a medium size bowl. Beat on high speed until silky and smooth; about 4 minutes. Set aside.

In a small saucepan, on medium heat, melt 1 1/2 cups of sugar until thin and dark. Don't put utensils into pan, shake the pan to melt all the sugar. Don't let it burn. Coat the bottom and sides of a 2 quart flat bottomed casserole with the melted sugar. Pour in milk mixture. Place in pan of hot water in 350 degree oven for 1 to 1 1/2 hours until middle doesn't shake. Cool completely before unmolding onto serving dish. Sugar will be syrupy. Spoon extra syrup over flan when serving.
