TUTTI FRUTTI LEMON 
1 (8 oz.) can pineapple tidbits
1 (11 oz.) can mandarin oranges
1 (17 oz.) can fruit cocktail
1/2 c. flaked coconut
2 tbsp. lemon juice
1 pkg. instant lemon pudding
2 bananas
Frozen whipped topping, thawed (opt.)

In large bowl combine undrained pineapple, undrained oranges and undrained fruit cocktail with the coconut and lemon juice. Sprinkle instant lemon pudding mix over fruits and toss lightly to combine. Chill. Just before serving, peel and slice bananas. Fold into lemon fruit mixture. Serve with whipped topping if desired.

I was so happy to find this online because my mother made it for many years and we al loved it! It is light and so good after a heavy meal. I lost the recipe though so have not made it in a few years. It is similar to an ambrosia without the marshmallows (cannot stand those thing!) and is quick and easy to prepare as well as not being too bad for you, considering it is a dessert. Mom always made it for holidays and it was a huge hit with everyone.
