PEANUT BUTTER CRUNCH COOKIES 
1 c. butter
2 c. firmly packed brown sugar
1 c. peanut buter
4 egg whites, slightly beaten
1 tsp. vanilla
2 c. flour
1 tsp. baking soda
2 c. crisp rice cereal
1 1/2 c. peanuts
1 c. oats (not instant)
1 c. coconut

Preheat oven at 350 degrees. Combine shortening, sugar, peanut butter. Beat until blended. Beat in egg whites and vanilla. Combine flour, baking soda and baking powder. Mix into creamed mixture until blended. Stir in one at a time cereal, nuts, oats, coconut with spoon. Drop rounded tablespoon 2 inches apart onto ungreased baking sheet for 8 to 10 minutes.
