SPICY HAMBURG-POTATO CASSEROLE | |
5 to 6 med. potatoes, diced and cooked 1 to 1 1/2 lb. hamburger 1 med. green pepper, chopped 1 to 1 1/2 med. onion, chopped 1 (4 oz.) can mushrooms with juice or 4 oz. fresh and sliced 1 can cream of mushroom soup 1 c. sour cream 1/4 c. chopped pimiento 1 clove garlic, chopped 2 c. soft bread crumbs or 1 sm. batch homemade biscuits 3 tbsp. melted butter (to be used with bread crumbs) In large skillet, brown hamburger, onions, green pepper and garlic. In medium bowl, mix soup, pimento and mushrooms. Add potatoes to meat mixture and cook lightly, stirring occasionally. Add soup mixture and simmer 5 minutes. Add sour cream and blend thoroughly. Remove from heat and pour into 3 to 4 quart casserole. Melt butter and pour over bread crumbs. Sprinkle crumbs over top. Bake at 350 degrees for 30 to 40 minutes or until bubbly. Makes 8 to 12 servings. May be made in advance and refrigerated, increase baking time to 60 minutes. |
