SPICY ZUCCHINI-NUT BREAD 
3 eggs
2 c. sugar
1 c. oil
1 tbsp. vanilla
2 c. grated raw zucchini
3 c. flour
3 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt
1/2 tsp. baking powder
1 c. chopped nuts

Beat eggs until frothy. Beat in sugar, oil and vanilla until mixture is thick and lemony. Stir in grated zucchini. Sift all dry ingredients together and blend well into egg mixture. Fold in nuts. Pour batter into two oiled and floured bread pans 8 x 4 1/2 x 3. Bake at 350 degrees for 1 hour.
