FRUIT PIZZA
1 pkg. refrigerated sugar cookie dough
8 oz. softened cream cheese
1 1/2 c. powdered sugar
1 1/2 c. orange juice
2 tbsp. cornstarch
Fresh bananas
Fresh kiwi
Fresh strawberries
Canned pineapple (chunks or sliced)
Pecan halves or walnut pieces

Remove cookie dough from package and form into ball. Roll or flatten with fingers into pizza pan. Press edges up to form a ridge around edge of pan. Bake at 350 degrees until just golden brown. Combine cream cheese and 1 cup of powdered sugar in bowl and mix until well blended. Spread mixture over warm cookie crust. Slice fruit and arrange over cream cheese mixture. I use pecan halves or walnut pieces to fill in any bare areas. Consider visual appeal when arranging fruit and nuts. In small saucepan, combine remaining sugar, orange juice, and cornstarch. Cook over low heat, stirring frequently, until thick and clear (still yellow but not opaque). Cool until lukewarm and pour over entire pizza. This glaze is not only a tasty "sauce" but it also prevents the fruit from discoloring. Serves 8-10.
