LEMON CAKE BARS 
1/3 c. shortening
1/4 c. soft butter
3 eggs
1 c. milk
1 1/4 c. sugar
1 (3 3/4 oz.) pkg. instant lemon pudding mix
1 tsp. salt
3 tsp. baking powder
2 c. sifted flour

Sift flour with salt and baking powder.

Blend shortening, butter, sugar. Add milk. Add pudding. Add dry ingredients. Beat well, turn into greased 15 x 10 x 1 inch pan. (Jelly roll pan) Bake 350 degrees for 30 to 35 minutes or until top springs back. Frost, warm or sprinkle with powdered sugar.
