APPLESAUCE CAKE | |
3 1/2 c. flour 2 c. sugar 2 tsp. cinnamon 1/2 tsp. salt 1 1/2 tsp. allspice 1 1/2 tsp. cloves 2 tsp. baking soda 2 c. applesauce 2 eggs 1 c. cooking oil 2 c. raisins 1 c. chopped nuts Soak raisins and nuts in water, while mixing cake. Mix flour, sugar, cinnamon, salt, cloves, allspice and soda. Make a hole in the middle of mixture and add applesauce, eggs and oil. Mix well for about 5 minutes. Drain raisins and nuts that have been soaking in water. Dredge in flour. Fold into cake mixture. Pour into a greased lined tube pan and bake 45 minutes at 350 degrees and 15 minutes at 375 degrees (25 minutes at 375 degrees). When done, cover tightly until cool, preferably overnight. |
