SPINACH SOUFFLE 
2 c. chopped cooked spinach
1/2 c. white sauce (with cheese)
3 egg yolks, well beaten
3 stiffly beaten egg whites

Combine 2 cups spinach, 1/2 cup white sauce with cheese and 3 egg yolks well beaten. Fold in 3 stiffly beaten egg whites. Pour into greased baking dish and bake at 350 degrees for 25-30 minutes. Pour some cheese sauce on top of spinach souffle.
