MARINATED MUSHROOMS AND RED
PEPPERS
 
1 c. light olive oil
3/4 c. red wine vinegar
1/2 c. finely chopped red onions
1/3 c. chopped parsley
2 cloves garlic, sliced
1 tsp. sugar
Salt and pepper to taste

Mix marinade and pour over 2 lbs. medium white mushrooms, sliced. Before serving, remove garlic slices and add 1/2 cup red pepper strips. Serves 16.
