SUMMER SPAGHETTI | |
2 c. sliced plum tomatoes 1/4 c. fresh chopped basil 1 or 2 garlic cloves, finely chopped Pepper Salt Spices to taste Virgin olive oil 1 1/2 c. Mozzarella cheese 1/4 c. fresh Parmesan cheese Pasta In a bowl mix 2 cups sliced tomatoes, basil, garlic clove, pepper, salt and spices. Then pour olive oil over all ingredients and let sit. Shred cheese. Save some Parmesan to serve on top. After pasta is cooked, drain it, then put pasta back in pan you cooked it in. Put all cheese into hot pan with drained off pasta. Mix it up. Put into serving bowl then pour tomato and olive oil mixture over the top. Serve hot or cold with French bread. |
