POACHED EGG SOUP 
1 c. water
1 egg
1 pat butter
Salt and pepper to taste

Bring water to boil in iron frying pan; break egg into and let white become firm. Put pat of butter in soup bowl; put egg into bowl, puncturing egg yolk.

Pour water over and salt and pepper to taste. Serve with crackers. (This was Mom's healing soup for every illness. Today we, the children of Bill and Thursa Green, still want this when we get sick.)
