SNOW PEAS WITH WATER CHESTNUTS 
1/2 lb. snow peas
1/4 c. sliced water chestnuts
1 tbsp. chopped scallions
1/2 clove garlic, minced
2 tbsp. vegetable oil
1 tbsp. soy sauce
1 tsp. cornstarch
1 tsp. water
1/2 c. chicken stock made with bouillon cube
1 c. cooked pork, shrimp or beef

Remove the tips from the snow peas and remove the strings as well. Heat oil in frying pan and saute the scallions and garlic. Add the snow peas, sliced water chestnuts and soy sauce and cook for 1 minute. Add the chicken stock, cover the pan and cook for 2 more minutes.

Now mix the cornstarch with water and add to the pan, stirring constantly until the sauce thickens, about 1 minute. Cooked meat or shrimp may be added here if desired. Serve hot over rice.
