ARTICHOKE CASSEROLE 
1 onion
3 c. cubed white meat chicken
1 can chicken broth
2 pkgs. frozen artichoke hearts
1 pkg. grated Swiss cheese
1/2 c. cooking sherry

In a large Dutch oven put brown onion. Add chicken broth, 2 packages frozen artichoke hearts and simmer. Just before serving, add cooking sherry and top off with Swiss cheese. I have cooked up a wild rice to serve with this delicious easy casserole.
