GEORGIA PEACH PICKLES 
6 lb. peeled and firm peaches, use pickling peaches; red
1 pt. vinegar
1 pt. water
3 lb. sugar
2 tbsp. whole pickling spices in spice bag
6 whole cloves in spice bag
3 sticks cinnamon

In a large container bring vinegar, water and sugar to a boil. Add spice bag and cinnamon and boil for 30 minutes, covered. Remove spices and add peaches. Simmer until peaches are tender, approximately 5 minutes. Remove peaches, pack into jars and cover with the hot liquid and seal. When peeling the peaches immediately drop them in a solution of 1 tablespoons salt and 2 tablespoons vinegar to 1 gallon water. This prevents them from turning dark brown during preparation.
