HAWAIIAN CHICKEN 
2 to 3 lbs. parts chicken
Salt
1 egg, slightly beaten
1/3 c. frozen pineapple-orange juice concentrate, thawed
2/3 c. bread crumbs
2/3 c. flaked coconut
1/4 tsp. curry powder
1/4 c. melted butter

Sprinkle chicken pieces with salt. Mix egg and thawed pineapple- orange juice concentrate. Mix crumbs, coconut and curry powder. Dip chicken pieces into juice mixture then into crumb mixture. Place chicken into a shallow baking pan, skin side up.

Drizzle melted butter over top, cover and bake at 350 degrees for 30 minutes. Remove cover and bake 30 minutes longer or until browned and tender. Enjoy. Serves 6-8.
