SCAMPIE 
3/4 c. (1 1/2 sticks) butter
2 lbs. shrimp or scallops
1/4 c. finely chopped onions
3 tbsp. finely chopped garlic
1 tsp. salt
1/8 tsp. pepper
2 tbsp. lemon juice
1/4 c. chopped parsley

Shell shrimp raw and leave tails on. Melt butter in large skillet. Saute shrimp, onions, and garlic for 5 to 8 minutes, turning once. Transfer shrimp to hot platter. Add salt, pepper, and lemon juice to butter in skillet. Heat. Pour over shrimp and sprinkle with parsley.
