PEACH COBBLER 
1 stick soy oil butter
1 c. whole wheat pastry flour
1 c. soy milk
3/4 c. maple syrup (divided)
4 c. sliced peaches (fresh raw peaches sliced thinly)

Mix peaches with 1/2 cup of maple syrup and bring to a boil. Melt butter in a 9x13x2 pan in a warm oven. Mix flour, remaining 1/4 cup maple syrup and soy milk in a bowl. Pour flour mixture over melted butter. Pour hot cooked peaches evenly over flour mixture. Bake at 375 degrees for 30 minutes. A cake like crust forms on top and sides of pan. Serve hot.
