SWEET POTATO MUFFINS 
1 3/4 c. sugar
1 3/4 c. cooked (boiled or baked) sweet potatoes

Beat sugar and 1/2 cup butter and 2 eggs. Add: 1/2 c. milk 1 tsp. vanilla 1 1/2 tsp. baking powder 1 tsp. salt 1 tsp. cinnamon 1/2 tsp. allspice 2 1/2 c. flour 1 c. pecans, chopped

Grease muffin tins. Bake at 350 degrees for 25 minutes. Yields 3 dozen.
