QUEEN ELIZABETH CAKE 
1 c. boiling water
1 c. chopped dates
1 tsp. baking soda
1 c. sugar
1/2 c. butter
1 beaten egg
1 1/2 c. sifted all-purpose flour
1 tsp. vanilla
1/8 tsp. salt
1 tsp. baking powder
1/2 c. chopped nuts

Pour boiling water over chopped dates and add baking soda. Let stand. Mix and add remaining ingredients to dates. Pour batter into 9 x 12 inch pan and bake 40 minutes at 350 degrees.

ICING:

5 tbsp. brown sugar
5 tbsp. heavy cream
2 tbsp. butter
1 pkg. coconut
1/3 c. chopped nuts

Boil sugar, cream and butter for 3 minutes. Pour over cake while cake is still hot and sprinkle with coconut and chopped nuts. Recipe can be doubled.
