QUEEN ELIZABETH CAKE 
1 c. boiling water
1 c. chopped dates
1 tsp. baking soda
1 c. sugar
1/4 c. butter
1 beaten egg
1 tsp. vanilla
1 1/2 c. sifted flour
1 tsp. salt
1/2 c. nuts, broken
1 tsp. baking powder
Icing (recipe follows)

Pour boiling water over dates and soda. Let stand. Cream sugar and butter. Then add egg. Add flour, baking powder, salt and vanilla stirring well with spoon after each 1/2 cup. Add date mixture and nuts last. Place on greased, floured 9 x 12 inch pan. Bake 35 minutes at 325 degrees. Poke holes in cake with fork.

ICING:

3/4 c. packed brown sugar
1/2 c. cream
4 tbsp. butter
Coconut

Mix brown sugar, cream and butter in sauce pan. Boil for 3 minutes and spread on cake. Sprinkle top with coconut. Pat down slightly.
