3 lb. Ricotta cheese
1 2/3 c. sugar
Chocolate chips, optional
Maraschino cherries, halved or quartered
1/4 c. amaretto or creme de cacao
1 tsp. vanilla extract
3 pkg. lady fingers

Beat 10 to 15 minutes at medium speed: Ricotta, sugar, vanilla, liquore.

Mix in chocolate chips (optional).

Line springform pan with split lady finger (line sides first).

Add 1/2 filling.

Make another layer of lady fingers.

Add the rest of the filling.

Decorate top with lady fingers and cherries.

Chill and serve.
