CHICKEN A LA KIEV 
3 whole chicken breasts
2 tbsp. garlic butter
1 whole egg
Flour for drying
Fat for deep frying
Bread crumbs

Cut the breasts in half. Skin and bone, using a small sharp knife. Save a piece of the wing bone, approximately 3 inches long. Place meat between 2 pieces of waxed paper and pound it gently until thin. In the center place 1/2 teaspoon butter and roll the meat around the bone to form a "leg." Pat dry in the flour, then brush on the egg, then roll in the bread crumbs. Refrigerate until ready to cook.

To Cook: Have fat in deep fryer at 375 degrees, place in the prepared "legs" and cook until they are brown all over (6 to 7 minutes).

NOTE: If prepared correctly, the butter will remain inside the "leg" and ooze out when cut.
