ZUCCHINI CASSEROLE 
5 c. 1/4 inch sliced zucchini
1 1/2 c. Bisquick baking mix
1 1/2 c. shredded sharp American cheese
1/2 c. vegetable oil
3 eggs
1 tsp. dried oregano leaves
1 tsp. salt
1/2 tsp. black pepper

Heat oven to 400 degrees. Grease 9x12x2 inch dish. Mix all together. Spread in dish. Bake uncovered until golden brown and knife inserted in center comes out clean, about 20 to 30 minutes.

Leftover meat such as ham, beef can be added, if you like. Any leftover casserole is good served with some spaghetti sauce, poured over it and heated.
