GERMAN PANCAKES 
4 eggs
1 c. sour cream
1 c. cottage cheese, prefer light cottage cheese
1 c. flour
1/4 tsp. salt
Honey, or sugar, to taste

Beat eggs until foamy. Beat in sour cream and cottage cheese. Stir in flour until blended; mix in honey.

Fry by large spoonfuls in prepared fry pan. (I prefer using Butter-Flavored Pam. My grandmother's original recipe uses butter.)

These pancakes work better by cooking them individually in a small fry pan, since they run. However, you can cook them several at a time in one large pan, if it is hot enough.

Cook on low-medium heat until lightly browned on each side.

This recipe is at least 3 generations old. My grandmother prepared these for me when I was a young child. My three children have all grown up on them!
