HERBED SIRLOIN | |
5 lb. sirloin steak, 1 1/2 inch thick 1 clove garlic, split 1/3 c. oil 1 1/2 tsp. salt 1/2 tsp. cracked pepper 1 1/4 tsp. rosemary 1/2 c. dry red wine 1 tbsp. butter Preheat oven to 350 degrees. Wipe steak with paper towels. Rub each side with garlic. Heat oil in heavy skillet until hot. Over high heat, sear steak on both sides, 3-5 minutes on each side. Place steak on rack in shallow pan. Sprinkle with salt, pepper, and rosemary. Add garlic. Bake in oven 25 to 30 minutes. Place steak on platter. Pour off fat from pan; discard garlic. Add wine to pan and bring to boiling, stirring to loosen brown particles. Stir in butter. Pour 2 tablespoons over steak; pass the rest. |
