CORN CHOWDER | |
1/2 c. chopped onions 1 c. sliced mushrooms 1/2 c. chopped red bell pepper 2 (16 oz.) cans cream style corn 1 (12 oz.) can whole kernel corn or 1 1/2 c. fresh corn, removed from cob 1/4 tsp. pepper 1 tsp. salt 2 c. diced potatoes, cooked in 1 c. water, undrained 3 c. milk 2 c. light cream Saute onions, mushrooms and pepper until tender. Add the remaining ingredients and simmer at least 15 minutes. Serve very hot. Serves 6-8. |
