CARROT CAKE 
4 eggs
1 1/2 c. oil
3 c. plain flour
2 c. sugar
2 jars baby carrots, junior size
2 tsp. cinnamon
2 tsp. baking soda
2 tsp. baking powder
1 tsp. vanilla

Combine eggs, oil, and sugar. Mix. Sift dry ingredients. Add to egg mixture and mix. Add 2 jars baby carrots and vanilla. Bake at 350 degrees for 40-45 minutes. Insert toothpick to test for doneness. Cool. Mix ingredients for icing and add nuts.

ICING:

1 box confectioners sugar
1 (8 oz.) cream cheese
Pecans, chopped
1 tsp. vanilla
1 stick butter

Mix together.
