SPINACH "QUICHE" 
This is not a quiche, but the name was on the recipe my sister gave me.

1 c. flour
1 tsp. salt
1 tsp. baking powder
2 eggs
1 c. milk
5 tbsp. butter, melted
1 lb. grated cheese (provolone or med. Cheddar)
2 (10 oz. each) pkg. frozen chopped spinach, thawed & squeezed quite dry

Blend dry ingredients. Add eggs, milk and butter; beat together. Add grated cheese, onion and spinach; mix well. Spray a Pyrex baking dish 8 x 12 inches (2 quart) with no stick cooking spray and pour spinach mixture into it. Bake at 350°F for about 45 minutes.

Variation: Chopped ham may be added and broccoli may be used instead of spinach.
