BAKED FRENCH ONION SOUP 
1 tbsp. butter
2 lg. onions, sliced (or more)
1/2 tsp. sugar
1 tbsp. flour
2 cans beef broth
1 can water
Salt and pepper
4 slices French bread or 4 rounds of white bread toasted
Mozzarella, Swiss and Parmesan cheese

In large saucepan melt butter, add onions slices and cook slowly until soft. Add sugar and flour, stir and cook 1 minute. Add beef broth and water; season with salt and pepper. Simmer at least 30 minutes. Add more water if needed to make 4 cups. May sit for a couple hours for full flavor. In ovenproof bowls place toasted bread in each bowl. Pour soup over toast. Put 1 slice each of Swiss and Mozzarella cheese over soup to seal bowl. Place bowls on cookie sheet and bake in 400 degree oven until cheese is melted and brown. Pass Parmesan cheese to sprinkle over soup when eating.
