POTATO SOUP WITH SOUR CREAM 
2 c. potatoes, diced
1 c. boiling water
1/2 tsp. salt
1/2 tsp. pepper
1 sm. onion, sliced
2 c. sour cream
Minced parsley for garnish

Combine first 5 ingredients and cook together for 15 to 20 minutes. Add cream and cook until potatoes are tender. Serve hot.
